Cappuccino Bars

After my 2 week baking break, I was super keen to get back into the kitchen. The only real problem is that it only took about half an hour to whip these up. Certainly not enough time to satisfy my baking cravings.

These were delicious. I took half of these to a friend’s BBQ and the other half to my sister to make sure she constantly has a supply of baked goods on hand, which is vital to living I feel.
My father hated these. Although he’s a strange person who doesn’t like chocolate so his opinion on foods is obviously not very reliable. They are fairly chocolaty, but also quite obviously coffee. I’d say they are more Mocha Bars then Cappuccino Bars...

Base:
125g butter
1 cup brown sugar
1 1/4 tbspn ground coffee
Vanilla
2 1/4 cups plain flour
1/2 tspn baking powder
Salt
2 cups chopped chocolate
Glaze:
2 tbspn milk
1 tbspn butter
3/4 cup icing sugar
1/4 tspn cinnamon
 


Cream together the butter, sugar, ground coffee, and vanilla. Add in the plain flour, baking powder and salt. The dough will be crumbly. Add in 2 cups chopped chocolate and stir well.

Dump the dough onto your greased baking tray and press the dough evenly into the pan using your hands. Bake for 5 minutes and rotate the pan. Bake 5 minutes more until the edges start turning brown.

Remove from oven and cool for 10 minutes before spreading with glaze.

To make the glaze, in a small pot add all the glaze ingredients and let them melt over medium heat. Whisk briskly to remove any lumps and stir until barely bubbly. Drizzle glaze evenly over bars. Enjoy!
