Mashed Potato Truffles

I love to surprise people with cooking. Cook something that tastes so yummy, and only afterwards, when they’re licking their fingers, say “oh by the way, that was made of boiled gerkins” (or something similarly mind-boggling).

That is exactly what I did to my work colleagues. I plated it nicely on a fancy ceramic plate, left them in the kitchen, sweetly told everyone there was a treat for them....and waited until the plate was clean before chiming in “oh by the way, those chocolate truffles were made with mashed potato”
Cue swearing and gagging. Yet none could deny these were in fact delicious little morsels and they had to just accept it.

You should too. Try it. I dare you.

1 cup dark chocolate chips
1/2 cup cooled mashed potatoes
Vanilla extract
Options:
Cocoa
Crushed nuts
Coconut

In a small heatproof bowl, melt the chocolate. When they have melted entirely, stir in the mashed potatoes. Add a dash of vanilla. Stir, stir, stir. Try to get all the lumps out. (My mixture was still very runny and very un-truffle like)

Place the mixture in the fridge to firm up for 30 minutes.
Pour your rolling mixture (cocoa, coconut or nuts) in little bowls and have them ready. Take 1 tablespoon-sized hunks and roll between the palms of your hands. Work quickly as it’ll start to melt. Roll in desired topping, then place on a baking sheet and refrigerate until firm.
