I spent 4 days in New Zealand, 2 days home (working), 2 days in Cairns, 2 days driving and 3 days in Brisbane. Mmhmm. Last night, I pretty much just collapsed into my bed.
Thank goodness I plan for these things and always have a homemade meal frozen to ensure I don't have to consume popcorn for dinner....
My roommate is also going through her own crisis so she's not around much lately. Needless to say, the house is a disaster.
Do messy houses irk you as much as they do me? I can't stand it. This morning before work I scrubbed the stove. Tonight I'll attack the floors and dusting. I literally cannot stand it.
One day when I finally get my own place it will be clean, and minimalist with bulk storage areas and nothing that would otherwise collect dust or make it seem messier than it is. True story. Can't wait.

I could do with some of these pancakes right now.
So they were a biiiit of a fail. I’ve edited the recipe since making these but haven’t made them again. The flavour? Knock your socks off good! But they’re not fluffy. I mean I think they’re killer because I like my pancakes more crepe-y than fluffy – but I’m not normal. So I’ve amped up the fluffy factor for you.
1 cup flour
2tbspn brown sugar
2tsp baking powder
1 cup milk
1tbspn butter, melted and cooled
1 cup grated apple
Sift the dry ingredients into a large bowl.
In a jug, whisk together the wet ingredients
Add the wet ingredients to the dry ingredients and mix just until combined. You'll have some lumps in the batter. Fold in the apple.
Heat a frypan over medium heat. Dollop in some butter. When butter is sizzling, add batter to pan in batches. (I like to use 1/4 cup measures so they’re all about the same size)
Keep warm in the oven while you cook up the rest of the batter.
Stack up and serve with maple syrup!
