Blackberry Lemon Breakfast Jars

Ergh work is killing me lately.

I’m one of those people who wake up and dread going to work. I do not like my job. Period. There are no good days; there are no smiles in the morning. Only smiles when I go home. I still haven’t quite worked out if I’m in the right field but wrong job, or just totally 100% wrong.

Some days I look up research in my field and get excited, and then I go back to what I’m actually doing and it’s so boring, tedious and trivial.

I’m definitely a big picture kind of person. I like looking to the future. None of this right now stuff. As long as I have something to work towards, right now can just happen as it does. Everything ranging from food plans to my relationships to global issues (lovely big jump there) is all viewed in terms of the ultimate outcome. My job deals with the right now stuff. So I think the job was doomed from the start.

Are you someone who loves their job? I know quite a lot of people who love their job. I envy them. I wonder what that is like....
Anyway, my point is that I like to get up early and make fancy breakfasts before going to work. I find this helps me get into a better frame of mind. If I eat dry toast with jam, I start the day cranky which just gets progressively worse. BUT if I start with something like this, I start the day happy, excited and satisfied...before slowly getting cranky :P
Do you have any tips for me to turn mornings into happytimes?


Serves 1

1/2 cup greek yogurt

1/2 cup granola (linked recipe)

1/3 cup lemon curd (linked recipe)

1/3 cup blackberries

1-2 tbspn sugar

This was actually a very simple breakfast as I already had 2 of the 3 components pre-made.

To make the berry compote, add the blackberries and sugar to a small saucepan on low heat. Let heat for 10mins. If you like a mushier compote, smash the berries a bit with a fork.
Spoon the Greek yoghurt into the jar followed by the lemon curd. Add the granola and top with the warm berries.

Simple and delicious!

  1. I love doing overnight oats although admittedly I'm not much of a breakfast eater and prefer to eat them late at night :)
