Energy Balls

So it’s Thanksgiving in America today.

Gosh I wish we had that here. I could have definitely used a day off today. Plus I’m totally down for bulk eating.
I’ve been so tired lately. I pretty much just open my eyes in the morning and they’re sore and tired. It’s not my eyes – I’ve had them checked – so I think it’s just my brain. Maybe my brain just doesn’t turn off at night. I love coffee.

I made these as an effort to a) curb my continuous hunger and b) get some healthy doses of energy into me. They met their objectives so I can vouch for their success. Plus they taste really good. Although I imagine the boyf would not like these. He’s not into seeds and I can definitely see him pulling a face at flaxseed...but I think they’re outstanding!
So easy. So delicious.

1 cup oats
1/2 cup ground flaxseed
1/2 cup natural peanut butter
1/3 cup honey
1-2tsp vanilla
1/3 cup sunflower seeds
1/2 cup mini chocolate chips

Mix together all of the ingredients in a large bowl with a wooden spoon.

Place the bowl in the refrigerator for at least 30 minutes to firm a little. Using your hands, roll into balls. (Mine are about 3cm balls but make them whatever size you wish)
Place back in refrigerator in an airtight container until ready to eat.

*notes: I didn’t use any chocolate chips because I was too lazy to walk to the shop.

  1. I've been in Australia for nearly 20 years but we had 10 for Thanksgiving in Queensland. Yes, bulk food intense but we had the best time.

    Today I need one of your energy balls!
